Ingredients:
1 pound fresh chestnuts
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon dried rosemary (optional)
1/4 teaspoon dried thyme (optional)
Preheat your oven to 400°F (200°C).
Using a sharp knife, carefully score an “X” onto the flat side of each chestnut. This helps
prevent them from exploding while roasting and makes them easier to peel.
Place the scored chestnuts in a single layer on a baking sheet or roasting pan.
Drizzle the olive oil over the chestnuts, then sprinkle evenly with salt, black pepper, paprika,
garlic powder, and any optional herbs like rosemary and thyme.
Toss the chestnuts gently to coat them evenly with the oil and seasonings.
Roast the chestnuts in the preheated oven for 25-30 minutes, or until the shells start to peel
back and the insides are tender. Shake the pan occasionally during roasting to ensure even
cooking.
Remove the chestnuts from the oven and let them cool for a few minutes before handling.
Once cool enough to handle, peel the shells and enjoy your savory roasted chestnuts!
